Seared Tuna with Soy Wasabi Glaze

Ingredients:
- 4 fresh Ahi tuna steaks (6 oz. each), approximately 3/4-inch thick
- Vegetable oil
- Sea salt and freshly ground black pepper
- 8 tablespoons cold unsalted butter
- 3 green onions, thinly sliced
- 1-2 tablespoons fresh lime or lemon juice
- 3 tablespoons soy sauce
- 1-2 tablespoons prepared wasabi
Directions:
- Brush both sides of the tuna steaks with oil and season with salt and pepper.
- In a small pan, combine the butter, green onions, lime juice, soy sauce, and wasabi.
- Heat a heavy, nonstick frying pan over high heat. Add the tuna steaks and sear until they are crispy and browned.
- Flip the tuna and sear the other side, taking care not to overcook it. Tuna is best served rare to medium rare.
- While the tuna cooks, gently heat the butter mixture over low heat, stirring constantly until smooth and emulsified.
- Serve the tuna immediately, topped with the sauce.
